pairing

i just got my hunters license. right now i have one for small game and fishing and plan on getting into big game. my question to you would be, what are your favorite beers to pair with your game, and what are your favorite recipes?

One of the best meals I ever prepared was a roasted pheasant that I made with a red wine and vegetables in the roasting pan. Was just winging it, so I dont recall any specifics. This was back in BMC/early craft beer college days, so I would imagine I paired it more of the red wine or maybe Pete’s Wicked Ale. Or then maybe it was Natural light, :o

I haven’t been fishing since I had my son (hoping to get him started in the next year or two, though), but I think I’d try swapping Saison for the white wine in my poached trout. Usually I throw a slice of lemon, a pat of butter, and some fresh herbs inside the cavity, and wrap it in a foil pouch with about 1/4 cup of white wine. Then cook it on indirect heat on the grill/campfire/camp stove, etc.

Smoked honest wheat ale with smoked pheasant was pretty good followed by a dessert beer like a blend of Founders Rubaeus and FCB’s Double Chocolate stout.

nice. has anyone done anything with coyote or beaver? I also have a tag for a whitetale deer for the end of the year. :slight_smile: thanks for the ideas.

I would never eat coyote. Wear yes, eat no.

You can treat whitetail deer like a really lean cut of beef. Steaks/chops are great with a blackberry reduction.

And it’s really killing me to not make a “I love to eat beaver” comment here…

Recipe for a fantasic day. 1. Be 19 years old 2. Score some hooch 3. Kill something and roast it.

I recently brined a large chicken in a solution that included 2 quarts of red ale, then roasted it.  Fantastic!  Should work well with any game bird.

I always enjoy brined meat. I will have to do that.
