Pig roast ideas

My neighbor is going to roast a pig at ~250F for our block party this weekend.  He is building the BBQ out of cement blocks.  Anyway I was looking for ideas for things could also be slow cooked in the BBQ at the same time.  Thanks in advance.

ATB’s are always a winner.

I have a smoker large enough for a whole hog, so I haven’t used a cinder block pit in a long time but it’s a great way to cook a whole hog!  I’ve never put anything in w/ our whole hogs, mainly because the hog is plenty enough meat for everyone that we’ve had over or that I’ve cooked for.  If we smoked anything else, such as Atomic Buffalo Turds, beans, fish, etc… we usually do it on a separate smoker since we didn’t want to open the hog pit except for turning the hog over once.

Not opening up the BBQ unnecessarily is a good point.  The recipe for ABT (sounds delicious, maybe I’ll include a date) says that it should cook for 3 hours so I wouldn’t be opening the BBQ excessively.

I like pineapple chunks in my ABTs.  Sweet works well with the heat.  Also, I’ve had good success with a frozen shrimp. Thawed over cooks but frozen works nicely and is done when the pepper is done.  I’ve also do a blend of cream cheese, shredded jack, canned crab and old bay.  Worked well but the crab got lost in all the other flavours.  Still, I’d do it again.

One thing that we’ve gotten into lately is smoking slices of Keilbasa on the grill.  Changes the flavour entirely and brings out a real nice peppery spiciness.  Just a finger food sort of app but tasty.
