Prohibition Ale

Do any of you have any good recipes for a prohibition style ale with a large percentage of corn?

Here is something I just made up in my head and am getting the ingredients next week to brew and try out.

Grain/Extract/Sugar

60.9% 7.00 lbs. Lager Malt(6-row) Canada 1.031 1
26.1% 3.00 lbs. Flaked Corn (Maize) America 1.040 1
13.0% 1.50 lbs. Honey 1.042 0

Potential represented as SG per pound per gallon.
Hops.  Amount Name Form Alpha IBU Boil Time

0.50 oz. Summit Whole 16.50 34.7 60 min.
1.00 oz. Cascade Whole 5.75 8.1 20 min.
1.00 oz. Cascade Whole 5.75 0.0 Dry Hopping.

Yeast
WYeast 1056 Amercan Ale/Chico

If you’re really wanting a prohibition ale (and I’ll confess, not entirely certain what that would be except an ale version of a Pre-Pro lager)

Drop the honey and drop the hops you’ve got there. Neither Cascade nor Summit would have been around back then. If you want truly old school Americano then you want ot use Cluster and maybe some American “noble” variant.

Agree with Drew about the hops. Even hallertauer would work well. But you don’t want American style “citrussy” hops. Also, I think honey and corn is over kill. Drop the honey.
