SA Summer Ale

Need some critique if you please.
I decided to make a Kinda Sorta SA Summer Ale loosely based on some recipe s I’ve seen on line. I could not wait of course and chilled a bottle after only 5 days conditioning. Of course the carbonation was a little low, but what concerned me was that the taste was a little watery. Here’s what I did let me know what you think. I’m learning, and it will be taken gladly whatever you say.

5.25 gal Batch
4.0 Gal Boil

6.0 Liq Breiss Wheat Ext 
1.0 Amber DME
1.0 Crystal 20  Steeped 30 min at 155

.50 oz Perle Pellets @45
.50 oz Cascade Pellets @ 10
.1/4 tsp Grains of Paradis @ 10
2 tsp Coriander@ 10
1 /2 Navel Orange sliced @10
Zest of 1 lemon @ 10
50Cascade pellets @ 2
.50 oz Perle Pellts @2
pitched a 1 liter starter of 1010

Primary 14 days

A Summer ale isn’t supposed to be dextrinous but more refreshing. How does it taste/feel now after a few more days?

I know this is an old post, but I’m new and trying to catch up on a lot of reading :slight_smile:

I had great luck with the following recipe for SA Summer Ale.  It turned out a little cleaner tasting than the SA version and a little lighter in body.  It was a great beer for the summer, but didn’t age well in the basement, probably 2-3 months max.

Style: American Wheat or Rye Beer
TYPE: Extract

Batch Size: 5.00 gal     
Boil Size: 3.25 gal
Boil Time: 60 Minutes

Ingredients:

3.30 lb      CBW Bavarian Wheat Liquid (4.0 SRM)
1.00 lb      Caramel/Crystal Malt - 10L (10.0 SRM)
0.25 oz      Cascade [7.50 %]  (60 min)
0.25 oz      Cascade [7.50 %]  (20 min)
1.00 oz      Saaz [2.80 %]  (10 min)
1.00 tsp      Irish Moss (Boil 15.0 min) 
1.00 oz      Lemon zest (Boil 10.0 min) 
2.00 gm      Paradise Seeds (Boil 10.0 min)
1 Pkgs        American Hefeweizen Ale (White Labs #WLP32Yeast-Wheat

Notes:

  • Steep Crystal 10L for 30 minutes @ 160 +/- 5º in 6qts of water.
  • 5 days in primary
  • 15 days in secondary
  • Bottled and started drinking @ 7 days, but 2 weeks seemed to be the magic number for taste.
  • Actual ABV 4.17%
