I don’t recall that one - or do you mean its Summer Ale (a citrusy wheat ale)? There are tons of recipes for that type of beer (Oberon, Shock Top, etc…)
Sam Adams Spring Ale
As a Kolsch, it should be a pretty easy recipe to make up. Does it have some lemon in it?
Here’s one from the AHA - you can add a little lemon zest if you want that to be present (it isn’t referencing SA, but it likely is close):
Ingredients:
MALTS
8 lb. (3.6 kg) two-row pale malt
1 lb. (450 g) wheat malt
HOPS
1 oz. (28 g) Hallertauer Hersbrucker, 4% a.a. @ 60 min
0.25 oz. (7 g) Hallertauer Hersbrucker, 4% a.a. @ 30 min
0.25 oz. (7 g) Hallertauer Hersbrucker, 4% a.a. @ 0 min
0.25 oz. (7 g) Hallertauer Hersbrucker, 4% a.a., whirlpool
WATER
Treat mash and sparge water with Siebel salts and calcium chloride. Siebel salts are a mixture of calcium sulfate, magnesium sulfate, magnesium carbonate, and ammonium carbonate (a.k.a. baker’s salt). They salts are not commonly used, but Brock Wagner does use them to brew Saint Arnold’s Fancy Lawnmower Beer.
YEAST
Kölsch yeast, e.g. Wyeast 2565 Kölsch or White Labs WLP029 German Ale/Kölsch Yeast
Specifications:
Yield: 5 gallons (18.9 L)
Original Gravity: 1.045 (11.3° P)
Final Gravity: 1.008 (2° P)
ABV: 4.90%
IBU: 17-19
Directions:
Mash at 151° F (66° C), ferment at 60° F (16° C), and crash finished beer to 31° F (−0.5° C). Carbonate to 2.7–2.8 volumes (5.4–5.6 g/L) of CO2.
Hmm… Is the recipe for the Sam Adams Spring Ale?
I ask as Austin Homebrew Supply has a recipe for the Spring Ale. Only part missing are details on the hops. Their recipe uses honey malt, 2 row and pale malt. No wheat malt is used.
No, it’s just a Kölsch, not Sam Adams specifically. I think SA typically uses Hallertauer Mittelfrüh for hops - at least at one time it did. It may have branched out on any of its seasonals, especially if availability was difficult at any point.
It has been at least 4 or 5 years since they brewed that beer as far as I’m aware, are you sure that’s the beer you’re talking about? Cold Snap has been their spring seasonal for a few years now, which is a witbier.
I emailed Boston Beer Company asking for a Spring Ale recipe for a homebrewer.
If Jim was still in change I’d feel more certain receiving a reply.
Anyone know Sam personally? Perhaps, if they directly contact him. I know Spring Ale stopped being made before Boston Beer acquired Dogfish, but never know…
