Sitting here with a beer grilling some lamb kabobs. And the urge hit me to brag about how great it is to have a Greek wife that’s an awesome cook!!
Looking good - i used to make cheese but it was really hard to keep dry cheeses safe from mould.
I think making feta is very doable because you keep it submerged(?) in brine. just thinking of the diy aspect.
Never tried any cheese making. Always wanted to though.
its doable for sure. but making unaged cheeses is pretty easy. the difficulty i found is you need a really aseptic environment to prevent mould from completely colonizing a cheese. imho making aged cheese is a lot harder than making beer
You’re a lucky guy, that looks amazing! I was stationed in Athens for 2 years and miss the food so much. I make pork souvlaki, feta and (IMO) an excellent tzatziki. If you’re interested in cheese making, I would recommend trying feta. It is one of the easier one to make. Yiamas!
