Anyone got a good recipe or tips? Planning to take a good Alt recipe and pretty much just bump up the OG and IBUs
That’s pretty much what I do. Plus maybe some late hops.
Thanks. I have the Zum Eurige recipe. Plannig something a bit bigger
…just bump up the OG and IBUs
First Draft (going with ingredients I have on hand):
80% pilsner
14% munich
4% caramunich II
2% carafa special II
1.067
Bitter to 50 IBU or above (schedule undetermined)
Herkules bittering
combo of sterling and hallertau mitt for flavor/aroma (see above)
M54 Cali Lager repitch
Looks good. I’d suggest a different yeast if available.
Not many options. I know you’re not a fan of US05 but do you think that would fair better? 34/70?
I’d go with 34/70 over the other 2.
If M54 is really K-97, it should turn out well. I haven’t used M54 yet to know for sure. But I know K-97 well. It’s pretty clean for an ale except for the sulfur.

I did not know that. Maybe I will avoid that. Not a big fan of K97 the few times I’ve used it

I’m with you. It was Ok, but didn’t impress me enough to make me want to use it beyond curiosity.
Thanks for the info. I’m sure I won’t nail it but will get close to something I would imagine…

And “nailing it” is kinda a matter of opinion, since they’re rarely made and everyone seems to have their own interpretation
Nailing an Alt is like nailing a Kolsch. It can’t be done since there are many variants.
I’ve tried making an Alt with a very high percentage of Pils, but I found it to be lacking the maltiness that I prefer. I used Best Pils in that version. But I find that a decent percentage of Munich malt is a more satisfying Alt to ME. Your preference my differ.

how much would you consider a decent percentage?

In my opinion, M54 probably isn’t the same strain as K97. I say that because I thought M54 cleared really easily but K97 was more powdery and took longer. …but who knows [emoji2369]

You’re likely correct. I’m interested to try M54 anyway eventually to try to figure out what else it might be.
I’ve read M54 is repackaged/rebranded Mauribrew Lager 497. But that is pure speculation I am sure.
