Using ionized water

I am considering using ionized water for brewing.  I can get it at a neutral pH (7.0), and have it withthe chlorine and chemicals filtered out.  What I’d like to know is how this ionized water would affect my all grain mash and resulting beer?

I assume you mean DEionized water.  You’ll need to add minerals to match the desired beer style and for yeast health.

Based on the little experiment we had in college, the usage of ionized water when brewing coffee or tea can bring out extra flavor and can also reduce bitterness. People, who use this, also say that they use less coffee because the water can add more taste of the coffee bean which adds more taste to the coffee itself. However, you can search online about using deionized water for this experimentation.
