Who Has Experienced BRY-97 Slow Start?

I had problems when Bry-97 was first released. These days it takes off in 12-16 hours when using a new pack.

I think part of the issue might be pitching enough yeast. Their pitch calculator says you need more than one pack for 1.048 SG+ 5 gallon batches.

I consistently have 97 start within 3-24 hours at 65F. Never had it take days. That said, I’ve generally found no difference in beer quality with starts (with any yeast) between 3 hours and 72 hours.

I’ve used Bry-97 quite a lot since 2018. These days, Bry-97 usually starts in 6-8 hrs (sometimes ~ 9). I’ve been rounding up my pitch rate, hydrating it with Go-Ferm, and using Fermax.

In 2018 (above) I experienced a fruity result with US-05 which drove me to Bry-97. These days, I’ve found that a higher temp (67-68°F) I get cleaner results with US-05.
