I have a great old ale recipe, but if you make it now it will take at least a few months to age out a bit.
OK. Let me take a look at it. Perhaps I’ll save it for next year.

Try a strong Scottish ale.
This one did okay the BrewUnited Comp:
82% weyermann Munich II
11% weyermann Pils
5% C60
2% flaked wheat
hopped with ~13 IBU centennial and ~10 IBU Challenger at 90 minutes
WYeast 1728
it was ready in just a month or so. Warming but not hot. Start it out cool and let it ramp up at the end to finish.
It’s not a traditional wee heavy recipe AT ALL but it was tasty. I boiled down the first ~20% of the runnings to a syrup on a side boil and added at the end of the boil. That’s really the secret with this style.
