Beer Ice Cream Recipe - Searching...

I saw a recipe for beer ice cream posted somewhere not too long ago. I thought it was here, but I can’t find it. Maybe it was in Zymurgy? It involved boiling the beer down to concentrate it, adding sugar and stuff. Aldi has a cheap ice cream maker this week, so I wanted to give it a try. Does anybody have a good recipe?

I always wanted to try drizzling in fresh LME (or concentrated 1st runnings) like caramel. I think some good, fresh Munich LME with some toasted and chopped walnuts would be GREAT. You could even candy some walnuts or almonds with the LME.

Emeril made a Guinness Ice Cream on his show. I would probably substitute a sweeter, less bitter stout or a nice scottish ale. Fruit lambic would be interesting.

A lambic might actually work in an ice cream.  The tart/sweet combo would balance nicely.

This would be the only use I have found for a lambic.  I’m happy some people like them but personally I have never found one I could drink.

I’ve never tried it, but here’s a recipe for Beer Sorbet from Ben & Jerry:

Ingredients:
Makes 1 quart

1 1/2 bottles (18 ounces) flat dark beer
5 tablespoons sugar
Procedure:

  1. Pour the beer and sugar into a large mixing bowl and stir until the sugar is disssolved.
  2. Transfer the mixture to an ice cream maker and freeze following the manufacturers directions. If you do not have an ice cream maker you can put the mixture into a shallow tray and place into the freezer. Stir every 20 minutes or so until frozen/slushy.
