I saw a recipe for beer ice cream posted somewhere not too long ago. I thought it was here, but I can’t find it. Maybe it was in Zymurgy? It involved boiling the beer down to concentrate it, adding sugar and stuff. Aldi has a cheap ice cream maker this week, so I wanted to give it a try. Does anybody have a good recipe?
I always wanted to try drizzling in fresh LME (or concentrated 1st runnings) like caramel. I think some good, fresh Munich LME with some toasted and chopped walnuts would be GREAT. You could even candy some walnuts or almonds with the LME.
Emeril made a Guinness Ice Cream on his show. I would probably substitute a sweeter, less bitter stout or a nice scottish ale. Fruit lambic would be interesting.
A lambic might actually work in an ice cream. The tart/sweet combo would balance nicely.
This would be the only use I have found for a lambic. I’m happy some people like them but personally I have never found one I could drink.

I’ve never tried it, but here’s a recipe for Beer Sorbet from Ben & Jerry:
Ingredients:
Makes 1 quart
1 1/2 bottles (18 ounces) flat dark beer
5 tablespoons sugar
Procedure:
- Pour the beer and sugar into a large mixing bowl and stir until the sugar is disssolved.
- Transfer the mixture to an ice cream maker and freeze following the manufacturers directions. If you do not have an ice cream maker you can put the mixture into a shallow tray and place into the freezer. Stir every 20 minutes or so until frozen/slushy.
