Anybody ever use this? How did it do? I am currently fermenting a schwarzbier with this. Pitched two packs at 50F. Will let you know how it turns out.
Fermented for 18 days. 12 at 50F then diacetyl rest for 6. SG 1.051 FG 1.014 (Schwarzbier). Resultant product exhibits no detectable diacetyl or other fermentation flaws. Nice clean flavor and dry finish. REady for the keg and cold crash. High FG due to cara malts in mash. Used Sinamar in this one, will try cold steeped dehusked Carafa next time. I think this one’s a keeper. For 4.50 a pack, the yeast performs very well, to my surprise. ;D
would you mind posting or PM’ing your recipe for the schwarzbier? I use beersmith, but text files are OK, too. I’m researching recipes for one I’m going to brew soon. Let me know how it turns out. I’ll probably use a Wyeast liquid lager yeast than a dry yeast (because I have it on hand).

This beer turned out very good. The yeast fermented clean and gives a nice dry finish. The beer has medium-light body and is quite refreshing for a dark beer. It has a very slight roastiness from the sinamar, but barely detectable. The ~ 10% cara malts give it a smooth mouthfeel and a very slight caramel sweetness. Letting the beer warm up a bit the hop flavor comes out better. This recipe is a keeper, although I’m going to try cold steeped huskless Carafa next time for color. Sinamar is just too darn expensive.
I liked it Jim. Very nice job. The sinamar lends a real nice background roast flavor.
