Has anyone brewed using this/Clarex?
10ml for 5 gal batch? Thoughts?

I have used it many times. My wife has celiac disease but she has no problem with the beer I brew that has Clarity Ferm added. For White Labs, use the whole 10 ml vial for a 5-gallon batch. If you buy the CellarScience product it is more concentrated, so use only 1 ml (0.25 tsp) for 5 gallons.

I’ve been using Clarity Ferm for about 2 years since my wife was diagnosed with a gluten sensitivity. On my second batch using this enzyme, which was an NEIPA with a wheat component, I had a sample tested. It came back at <10 ppm, which for all intents and purposes is nothing. So, actual proof it works.
I used Clarity Ferm — the full vial in a 5 gallon batch — for many years. Then I switched to Whirfloc Tablets. I find they work much better than Clarity Ferm.
Is whirfloc known to reduce gluten?
No. They are both finings made of very different ingredients. Whirlfloc is Irish moss and carrageenan whereas CF is a specific endoprotease (enzyme). However, a secondary benefit of CF is that it reduces gluten.
