I wouldn’t call it Pliny-esque unless you want to have to explain it constantly. It’s a Chinook DIPA. I’d move the 30 min and 45 min additions to later in the boil and/or dry hop. There’s no sense in boiling flavor additions that long, or adding bittering additions that late, IMHO. A week is plenty of time for dry hopping, two weeks is just wasted time. The majority of your extraction is going to be in the first couple days anyway.
I agree with Sean to just go with ‘Chinook DIPA’ as opposed to ‘Pliny-esque’. I say go for it. It’ll be piney and intense, but I love Chinook and if you’ve had Arrogant Bastard you’ve had Chinook. For IIPA I think you need more dry hops though - I use 6+ oz. Good luck.
I would stay away from a Chinook only brew. Chinook has a very high cohumulone level which can impart a very unpleasant bitterness. Citra and Columbus hops have significantly lower cohumulone levels with similar alpha levels and higher hop oil levels (flavor and aroma)
I’ve bittered many IPAs with Chinook and done well in comps with a few. And Brewing Network’s ‘Can You Brew It’ brews and re-brews of Arrogant Bastard all used Chinook all the way through - so Jamil and Tasty are pretty confident that it’s an all-Chinook beer. Chinook is definitely an assertive hop, but AB is evidence that it can work pretty well.
There have been some studies done that say that the original paper that said that was flawed. Cohumulone is more soluble, and you can get up to 50 more IBUs using a high cohumulone hop. More IBUs = harsher when it is to be the same. The original paper didn’t have a lab analysis of IBUs. Let the flames commence!
