Wonder if LalBrew Abbaye for Belgian Quad is a good choice? Haven’t tried LaBrew for Belgian Quad.
I have used that yeast on quite a few Belgian-style beers (but not a quad), with good results. It is the dry Belgian strain that I use most frequently. I think it would be a good fit for your project.
Yes, absolutely, it is similar to chimay in taste IMHO
make sure to use an appropriate amount of yeast per OG:

Thanks for the information!
Ken, it depends on what you want from your Quad. Lalbrew Abbaye produces quite a lot of isoamyl acetate (banana) aroma, like the Chimay and Weihenstephan 68 strains. The Fermentis BE-256 which is more similar to the Rochefort strain is a bit more subdued with a slight spice to it. I would probably tend to use BE-256 in a quad instead, but either one would work.
I took a Belgian Pale Ale to the homebrew club meeting a couple of months ago. Most thought for sure it must have coriander in it, even though it didn’t.
I have used BE-256 to finish off my quad after 1214 peters out and it works well for me. I have one smack pack of 1214 left and will use BE-256 exclusively after that.
