Fermentation finishing

I brewed a Wee Heavy with an OG of 1.092 and stupidly pitched Mangrove Jack’s M-15. M-15 only has a tolerance of about 8%. My beer only dropped to about 1.031, still too heavy. I’m trying to decide the best method to finish it off (mid to low 1.020’s). My thoughts are:

  1. New packet of M-42 (tolerance of 12%), make a starter and pitch at high krausen
  2. I have some Belle Saison that I saved from a month ago. I could create a starter and pitch. My only hesitancy is that this is my last of this yeast and you can’t buy anymore
  3. I have some BE-256 (9-11%) that I could make a starter and pitch at high krausen

Other thoughts?

I would use the BE-256. I sometimes use to finish off my Tripel when and if 3522 peters out. You do not have to make a starter. Just sprinkle a sachet on top of the beer. I made a Belgian Pale Ale with BE-256 and the Belgian character was very low. Just keep the temperature in the high 60’s to suppress any ester formation.

It seems like this is a chronic problem with the MJ yeast. I’d pick up any other clean ale yeast and pitch it. If you don’t mind a little more yeast character, the BE-256 is an ok alternative.
