I bottled a Belgian Quad back in June and the carbonation level is well below desired. The bottles have been kept at an average of 50F and I feel that the amount of priming sugar I used was adequate. I did not add any fresh yeast when bottling and suspect that is the cause as this is a 10.5% beer.
I’m considering whether to accept this beer which is tasty, just flatter than desired or to try and pop the caps off the 20 or so 22oz bottles remaining, add some fresh yeast, and recap.
Advice??
I’d start by warming it up about 20F and see if that helps.
