A while back I posted problems with my first proper pilsner. It turns out I severely under-pitched the yeast. I went ahead with it anyway. At bottling it smelled like a banana farm. After 2 weeks in the bottles, it tasted ok if a little solventy and smelled entirely like pears. After 3+ weeks, it’s actually a pretty dang good beer. It’s true that beer wants to happen. I am a bit surprised, though, at how much the esters disappeared. I’m so happy I didn’t give up on this one.
