Greek-style Yogurt

This is super easy in an Instantpot and kind of fun.

My wifeb males Instant Pot yogurt weekly.  Sometimes she strains it to make Greek, sometimes not.

Yeah, it’s super easy.

If you have an Instantpot, you just add a half gallon of milk and use the “boil” setting on the yogurt function.  That brings it up to around 185°.  Then you cool that down to 110° (I use a water bath in the sink, which takes less than 5 minutes), stir in some existing active-culture yogurt, set the pot to hold temp for your desired amount of time (10 hours seems to work well), and strain overnight in the fridge to thicken (or not).

And no problem without an instapot also.

I use an insta-pot often, with recipes from this cookbook.
Made a lot of them, some are so-so, some are great.
One of my favorites is the Perfected Cheese Cake.
Yes, cheese cake can be made with a pressure cooker !

Pressure cooker is the easiest and best way to cook corned beef.
Fill just enough water to cover corned beef, add spice packet, set for 2 hours on high.

Advice: If your insta-pot is used a lot or aged, replace sealing o-ring, cheap and on Amazon.
            Just be aware there are different sizes of insta-pots.

Is there a specific size mesh strainer that works well? I’d like to try this to make skyr.

I use a coffee filter in a strainer

looks good, I have thinking of doing coconut yoghurt, as its so bloody expensive, anyone got a recipe?
