I got too cute with Nottingham and Safale 05 - Opps

I brewed an eight gallon batch of a Pale Ale.  I split the batch into four gallons each to a five gallon carboy.  I pitched the Nottingham to one and the 05 to the other.  Of course I was going to keep track of the two and compare results.

I lost the paperwork telling me which was which.

I tend to use these two yeasts quite a bit and do actually sub them out as needed.  I also like to save my yeast and repitch.

Now, what would happen if I saved the slurry from both batches and mixed them after washing?  You folks see any real negative to using a Not5 mystery yeast in any bath calling for a Nottingham or Safale 05?

Eventually it will be either Nottingham or US-05. It may take one repitch or ten, but eventually one strain will outcompete the other. I don’t think it’s a bad idea, but I wouldn’t expect consistency from one pitch to the next either.

To my tastes, Nott has a tartness that 05 doesn’t.  You may be able to distinguish them by that.
