What kind of shrooms?

Chanterelles.  2 1/2 lb. in 5 gal.  It’s the infamous Wee Shroomy!

I’ll bet its quite tasty!

Deee-lishus!  Chanterelles and wee heavy seem to be made for each other!

I’m not sure what to think.  The idea doesn’t sound appealing but then again, I haven’t seen you steer anyone wrong on here yet.  I may give it a try.

Did you also do the side boil of the first runnings ala the Traquoir House Wee Heavy?  I have that one in primary right now - but no shrooms.

Hey Denny,  How do the shrooms hold up after the dry shrooming?  Are they useful as food afterward?  Just curious.

Let us know if you see the shrooms and the yeast having sex in there and creating mutant fungi.  I don’t know what that might look like, but it might be scary.

Sure did.  Took a gal. down to about 3 cups.

Unfortunately, they’ve given their all by the time the beer is done.  I sauteed a few up yesterday.  They weren’t anything I really enjoyed eating.

Denny:  I’m assuming you used fresh Chanterelles, not dried?

Yep.  My wife picked them from the woods behind our house.  I do nothing more than brush the dirt off, chop them up, vacuum seal and freeze them.  When you thaw them, there are at least a couple cups of liquid that come out.  Add all that and the mushrooms to a secondary with the beer.  No sanitizing, no vodka tinctures.  I tried that and hated the result.
