I am making my summer lagers right now and will stop to brew ales in May. I have been using the PseudoBohPils water pprofile from Bru’n Water. Can I keep the same water profile for a Kolsch?
You can use the same BoPils, or if you want to add a little more minerals that would be fine too. FWIW, my tap water is moderately hard, and for the Kolsch that I just made, I just used my tap water without any adjustments, and I think it turned out pretty well (although it isn’t carbonated yet).
Can you be a little more specific in what minerals to add?
It depends on your source water
…and depends on whether you think it really matters, and how much it takes to make a difference. On that, I honestly (1) don’t know and (2) don’t know. Just being honest. Best advice: Experiment over several batches to find out what YOU think is best.
I use 100% RO water.
The psuedopils profile doesn’t have much sulfate. Koln water does have a decent amount. Roughly 70 ppm sulfate and 35 ppm chloride. Sulfate doesn’t make beers bitter, it makes them dryer.
