Light pale ale by extract.

I about to make a new run of extract made beer. I wanted to know how much I should dial back the lme for a light beer. Also any information on the platinum strains of yeast from white labs.

Just to clarify, when you say “light” are you talking color or ABV?

Both something really drinkable especially during a hot summer

I would shoot for 1045 OG. You can use the lightest coLored DME with some caramel malt.

For a drinkable pale ale I like to move all the hops to 20 min or less and shoot for 20-25 IBU.  That is below bitterness guildelines for a APA but it makes for great drink ability.

For a 5G recipe you might try

6# Pilsen LME
0.5# C60
American Ale yeast.

1 oz Amarillo @ 20
0.5 oz. Amarillo @ 0
0.5 oz Amarillo dry hop

You can up the total hops to 3oz for little more bitterness.

You can substitute Amarillo with Simcoe, Citra, Centennial, or many others.

Personally, for a summertime beer designed to drink practically frozen in the hot weather, I’d shoot for somewhere between OG 1.036-1.040…still plenty flavorful and very refreshing, but with a bit less alcohol to bog you down so you don’t get trashed if you have more than 2 or 3.

+1 on Tommy’s recipe, it looks like a quality summer ale.  Below is a link where you can work out your own details and I personally prefer keeping it under 1.040 for lighter summer ales.

You could even replace some of the extract with table sugar to lighten both the color and the body.
