Midnight Lager

My brewing partner wants to make a Midnight Lager clone for his wife.
Figuring base malts of Pils/Vienna, how about adding chocolate malt? How much for a 10 gallon batch?

About 22 lbs of base malt, so maybe 2 lbs chocolate?

Or, how about using Cara-Bohemian?

Here is my recipe for a dark logger but my style it’s a shwarzbier.

How do you feel about Chocolate Wheat Malt? You would expect to get a little bready, dark chocolate and a touch of caramel. 5% usage maybe less.

I think it fine.  That’s why it’s home brewing, you may find that it provides the flavors you looking for but you’ll never know until you try it.

I just did a mini-steep tasting of all of my dark grains this weekend and Weyermann’s Chocolate Wheat was one that I sampled.

It’s pretty far from Chocolate to my taste.  I get more ash (ashtray more like it) and dry roast than anything.  More roasty to me than Roast Barley.  To my palate anyways.
Not that you can’t use it (I love roasty flavors), but I’d recommend starting this malt on the low % end and working up to your taste level.
