Munich dunkel - critique?

Anyone care to critique this grain bill for a munich dunkel?  5.5 gal, OG 1055.

4 lbs 8.0 oz Munich I (Weyermann) (7.1 SRM) Grain 1 39.6 %
4 lbs 8.0 oz Munich II (Weyermann) (8.5 SRM) Grain 2 39.6 %
1 lbs 8.0 oz Vienna Malt (Weyermann) (3.0 SRM) Grain 3 13.2 %
6.0 oz Carafa Special III (Weyermann) (525.0 SRM) Grain 4 3.3 %
4.0 oz Caramunich II (Weyermann) (63.0 SRM) Grain 5 2.2 %
4.0 oz Melanoiden Malt (25.0 SRM)

Planning on a single decoction at mashout.
Should I go with all munich II?
Only small amount of Cara so its not too sweet.  Maybe remove altogether?
Thought I’d add melanoiden since it won’t be an authentic triple decoction.  Thoughts?

i think you are good, and you would be fine just going all munich II. very flexible beer, so give it a shot and then tweak from there.

I like the use of melanoidin so I would keep it.

Looks good to me no need for the Melanoiden malt youll get plenty of malty goodness out of the munich malt alone. some of my favorite MD’s are all munich 2 and a little carafa for color. i say flap a lip on it and gives us a shout on what ya think.

Thanks for the quick responses!  I like the idea of all munich II.  But will it be able to fully convert on its own.  I see a lot of dunkel recipes with munich I or II and either pilsner or vienna thrown in.

I have never had a prob with full conversion. Most malts are well modified now a days and you should not have an issue with weyermann.

I’ll be watching this. I’m about ten days in the fermentor with my Dunkel 2.0 and my grains for 3.0 are at my LHBS… in other words I’m working on perfecting mine right now too. So far I’ve made two fairly good vienas, but Dunkel is still being sought

If you want to mix Munich I and Munich II that is fine. I would skip Vienna all together. You should not have more then 2% of Carafa Special in there. I use 1%. Also skip caramunich II. With 2.2% it does not do anything.

Agree, too much carafa, it’s going to be too dark.

I hear a lot of people say they like all Dark Munich in their beers and the mroe and more I play around with dark german styles the more I think you can have too much dark munich. A blend works the best. I always add about 10% pils, but that’s just an option. For me, I find it makes the beer just a bit drier which I like.

My dunkel is 99% dark munich 1% carafa III.

Which Dark Munich is the favorite? I’m sure there will be many answers.

Might have to special order the Best Dark Munich. The LHBS usually has Weyermann’s.

My recipe is also 99% BM Dark Munich and 1% Carafa II. It won gold at FOAM Cup and is eligible for MCAB… but I drank it all.

Agreed.  Just ordered both their Munich I and II.

Best for me too both l and ll. i am lucky enough to have a local brewery let me know when they are doing an order and i can toss on a bag or two.  i feel spoiled for sure. It depends what i am craving for mine i like it chewy like Ayinger Altbairisch Dunkel. I am really digging this one lately wish i could pin a recipe down. Just gotta brew more:)
