Out of Date

I purchased 5 Diamond Lager yeast pkg’s a few weeks ago and one pkg was soft. Merchant replaced but I never checked the pkg they sent and just placed it in the fridge, wrong friggin yeast. My bad!!

I found 2 pkg’s of Diamond in my keezer with a exp date of 10/21.

2 questions: 1- Is the yeast to far expired to be viable?
                  2- If I use it, do you think it will make much of an impact on yeast cell count?

17 gallon/64L batch @ 1.050 OG
Low end of the pitching rate is 1g/L

I have used dry yeast, including lager strains, 1-2 years past expiration date multiple times without problems.

I brew small batches; 3 gallons. So cell count has never been an issue for me.

I have had good results with dry yeast well past the expiration date, (but they have always been kept in the fridge).

Where did you buy this yeast from?

Label Peelers is notorious for shipping old (VERY OLD) yeast.

1-2 years is quite some time. I would be leery of trying but is definitely reassuring that they still performed well.

On a side note, I wonder at what batch size does cell count begin to make a noticeable difference?

It wasn’t shipped past its exp date. I had them in my keezer for a while.

My contacts at Lallemand have confirmed to me that dry yeast is good for years past the date. 3 years at least. Looking for the email and I’ll post if I find it.

Dry yeast lasts nearly forever in refrigeration, with very little loss in viability.  Many many many years.  Your yeast is still perfectly good.  About 3 packs is all you need for 17 gallons, or 4 packs if you want to get fancy.  Good to go.

Last year I brewed a 3 gallon batch of bitter with a  6 gram pack of Muntons dated Nov 2016 that turned out fine.

Glad to read about expired yeast used and working as expected!! Pitched yeast yesterday @ 50* and showing signs of fermentation!!
