O G 1.030, 4-5 SRM, 30 IBUs
1 lb. wheat dme
1 lb. oak smoked wheat malt
4 ozs. red wheat malt
.75 oz. Saaz at 3.5%

I’d consider cutting the ibus to around 22-25.
30 ibus in that little beer, plus the smoke, is gonna be on the bitter end of balanced.
With only one pound of smoked wheat the smoke will be somewhat subtle.
Brewed this today.
1.5 lbs wheat dme
1 lb oak smoked wheat
4 ozs red wheat malt
.25 oz saaz at 3.2% (27 IBUs)

2.2 gallons at 1.036
What I was looking at is at 30 ibus, it’s a 1:1 bu:gu ratio, which is IPA level ratios.
My comment about the smoke is that smoke tends to intensify bitterness and adds a bit of astringency (further increasing that perception of bitterness).
I know you brewed it already at 27 ibus, which is a .9 bu:gu, and a step toward what I was thinking. I’m sure it will be good, I was just throwing out what I thought might help take it up a notch, that’s all.

Yeah I agree with the oak smoked malt you are a little light for the smoked flavor but you need 30 or so IBUs in that beer to get structure in the beer from bitterness and tannin content from using lower alpha hops. This is a style that should be hoppy and somewhat bitter by European standards. 30 IBUs and smoke weirdly works together and doesn’t clash like you would think.
If I ever get into a living situation that lets me do all-grain again I plan to do an all smoked wheat vetsion.
