Pepper extracts

I am soaking pepper in vodka to make a pepper extract to put in a beer.  Should I just add drops of the tincture in my beer or should I evaporate the alcohol in the tincture first and just add drops of the essential pepper oils left behind?

Drops of the tincture in the beer.  IMO the best way is to pour a measured amount of beer ( pint, quart, etc.) and add drops slowly, stirring, tasting until you hit the threshold you want. Then it’s simple math to scale up to your batch size with the right amount of drops. It’s the best way I know - anything else is just trial and error.

I like this technique. Is it common practice? Which type of peppers are you using OP?

Yep.

Just regular ground black pepper.  I’m not a huge pepper fans and don’t want a whole keg.  I will add drops at bottling.

Not as common is to use an aeration canister to make instant tinctures. Pretty freakin cool, though…

Drew demo’ed that during our seminar at NHC.  He used a NO whipper canister.
