PH 5.7 for Porter

I like to take my sample from the recirculation stream as it returns to the MLT. It doesn’t have any grain debris in the sample. I do it this way for convenience.

pH is very forgiving for conversion, but it also affects flavor. I like to target a specific mash, and sometimes kettle, pH for different types of beers. If it’s not where I want it, I can adjust.

If the wort sample has a bit of solids in it, it probably won’t affect pH measurement. But I do try and avoid bringing in anything other than clear wort for my pH and refraction measurements. I use a child’s medicine dropper to collect my wort samples from the mash and that limits the amount of particulates in my samples.

Just reporting back. Put the porter on nitro and poured my first pint tonight and it’s really good. Not harsh at all to my taste. So I guess the slightly high pH didn’t have any negative effects. Thanks ya’all for all of your input.
