I’m not a wine maker, but I’ve made many sparkling ciders (and beers) that way.
I think it depends on exacly how close “near enough” is for your tastes.
You would definitely get a sparkling wine. If that’s what you’re after, then yep, it’ll work.
No reason NOT to for it – try it and find out!

If you get a Prosecco kit, and carbonate it in a keg, it will taste like Prosecco - assuming you make it right.
