Following the release of the recipe for Stone Pale Ale, Stone has now released the official recipe for Levitation. Note the relatively high and short mash.
It is sad that Levitation is going away. I cannot count how many of these I have consumed over the years.
I don’t know for sure, but it seems like they are cleaning house to make room for the next big things. I know Mitch is working on a replacement for both Ruination and Stone Pale.
I intend to give this one a whirl as is, maybe sub the yeast for something I have on hand.
I’d imagine it’s being cleared out in favor of a pale ale with less crystal and a hop regiment full of the newer hops, similar to what Real Ale just did with their core pale ales.
Adding the recipe to software, and I don’t get the stated 45 IBU. I know they are big on the whirlpool there, so I am assuming they get the extra bitterness from the “flame out” additions.
Yeah, I’ve been seeing that alot. I’m really liking adding all the IBUs in the boil, and all the late hops after cooling to 175 - 160 . Keeps IBUs accurate for balance and the late hop character rocks.
The mash time is deceiving. Especially if you batch sparge, I’d recommend a 60 min. mash. If you fly sparge and don’t mash out (no mash out in the recipe), then a 30 min, mash would work since you’d be at mash temps all through the lauter.
