I brewed a lager on the 9th (Thursday evening) and will start on the octoberfest in a hour or so. The recently brewed lager is showing signs of fermentation- a krausen about 1.5" thick but only covers 4/5 or the beer’s surface.
Is it too soon to crop the yeast and can one even “top-crop” a lager fermentation?
You can’t top crop Lager fermentation. There isn’t much yeast in that Krauesen.
You also won’t be able to harvest yeast until the beer gets into the slow part of the fermentation and clears up. Until then most yeast is in suspension.
