She is in da fermenter and looking good. Hope it tastes good in a couple months.
;D WLP 940 Mex lager yeast.
4 lb pils
5 lb vienna malt
.75 lbs flaked maize
handful of pale chocolate.
.5 lb acid malt
touch of carafoam and wheat malt for head.
Edit: Hops…1 oz Hallertau GR and .5 oz Cluster for the full 90 min boil

Jealous… I have everything ready to go, but I need some snow to melt, or at least for the wind to die down for a day. Fingers crossed for Monday/Tuesday.
Frackin wind was howling at 50 mph for real while I was brewing this…dang whitecaps in da toilet.

I like the hand full of pale chocolate. I just tried that same addition in my last batch. I was drinking mine last week (brewed in July) and I was surprised how much I liked it over the batches I have done without.
Enjoy it, but make sure to let it lager for a while. It is hard to do but it is worth it!

color looks spot on - should be tasty!
More like I do not have a Ph meter and all the solutions for same. I have had
good luck using this amount with the water I make from the RO machine at da store
in previous batches…beers from this have been real tasty compared to
when I was not modifying my water…
I add chalk back in the mix (dissolved for days in carbonated distilled water (carbonic acid) thanks Kai.)

That has been my experience with that malt…I do like it mucho…
This has really fermented in a rapid amount of time…I have
placed the bucket in a bit warmer room for the d-rest after only
3 days, air lock has really slowed down. These guys chew
sugar pretty efficiently…
