I just started a batch of lacto-fermented beets (from the garden!). The heirloom-variety beets have a few sliced cloves of garlic, two red Thai chilis, and 5% brine to top up the jar. I’m looking forward to trying these out when they are ready, hopefully next weekend!

I also started up a batch of spicy brown mustard, but it’s more of a steeped mustard than a fermented one. Either way, it’s one of my favorite recipes and is going to be super tasty. I think it will go well with some grilled brats and homebrew.

I have beer naturally conditioning in my kegerator . Does that count?

It does!

I posted out on socials early but I’ve got a couple of hot sauce projects inflight - Super Rooster and Funky Papi and tomorrow I’ll make a Blueberry Chipotle sauce.

Beer totally counts—fermentation’s fermentation. Going for the hot sauce myself, figured I’d try something different from my usual brewing.
