Anyone use this strain? Looking to change up my lagers that I usually brew with WY 2124 and picked a tube up at N Brewer.
Used it last year and liked the results on a few beers. Have it in a Helles now.
Lager X rhymes with Kloster Andechs. They make some rally good beers like Helles, Dunkel, and Doppelbock.

Agreed on the Helles.
I pretty much only brew 3 beers, Pilsner, Oktoberfest and Dunkel. I’ll probably reuse this yeast for about 6 generations.
Never used it. I’d like to soon.
just picked up two vials. going to be used in another round of oktoberfest and helles.
I am still thinking I like the Ayinger for one of the house lager yeasts, but the 835 is pretty darned good too. Good memories at Andechs go with it.
I really like it when I can get my hands on it. I brewed a couple really great batches of Helles with it last year. Wanted to try it in some other lagers, but did not plan ahead well enough last time it was out… Going to run it through a few different beers this year. I have a Helles going now that I can harvest yeast from and step it into a number of other beers… Probably try it in a Dortmunder and a Pilsner which I brew often just to experiment. Will also probably use it in a Maibock, maybe a schwarzbier… perhaps a bock (which I rarely brew).
What number is the Ayinger yeast? I’ve never used it, but I do like all their beers actually. Their O-Fest is fantastic.

By all accounts, 2487 is from Brauerei Schloss Eggenberg in Austria. Used side by side, these two yeasts really don’t seem to be equivalents.

Hadn’t heard that. Mr Malty and several links show 2487 as Ayinger. Doesn’t make it so, though. Of course I see differences in some of the WY/WL equivalents. Good info.

For one thing… Ayinger is definitely not in the Austrian Alps

You can see the Bavarian Alps from the town of Aying, but it is surprisingly flat around there.

Im going to be using this strain side by side with WL southern Ger. Lager (838) on a 10g batch of helles. Ive heard good things so im looking forward to it.
Very interested to hear your experiences with WLP835, especially how it compares to WLP833 (which I’ve been using for just about everything) - Andechs makes one of my favorite helles!

you’ll love it. i find its something like a combination of 833 and 830. i’m using it this weekend in a Helles Bock.
