Would this taste like crap?

Told a friend I would do a brew with her next week but I’m low on base malts and may not have time to get more.

5 lbs Vienna
5 lbs wheat malt plus rice hulls.
1/2 oz Simcoe at 10
1/2 oz Citra at 10
1/2 oz Simcoe at flameout
1/2 oz Citra at flameout.

She likes hops but not bitter. Thinking a late hopped wheat beer with pronounced hop flavour and less bitterness.
Thoughts?

I don’t think it would taste like crap, but I dunno if Simcoe would be tops on my list for a wheat beer. It’s one of those hops that makes every beer taste like an IPA to me. I don’t think it would taste bad, but maybe more like an APA than a hoppy wheat beer. I’d lean towards something like Amarillo, Centennial or Mosaic to pair with the Citra. That’s just personal taste, though.

Good point. I have all of the above as well so I can sub in Amarillo for Simcoe (I am not a big Simcoe user so I have a pound I bought and am now looking to use up).

My wife would smell it and say “cat pee”. She does not like Simcoe or Citra due to the 4MMP.

For me it would be just fine.

I brewed an IPA recently that was an equal mix, I think, of wheat, munich, and 2-row with simcoe and chinook in the boil, dry hopped with cascade and glacier. It was pretty tasty.

Sounds good to me! Personally I agree with ERock, but that’s just because I have inordinate penchant for Mosaic and Citra hops.
