Wyeast 3711 French Saison

This yeast is a monster!
Took my saison from 1.054 to 1.006 in a week.  Sample smells and tastes great.  I’ll bottle next weekend.  Has a chance to be spectacular!
I’m not a big saison guy but this might change my mind a bit.

Yes 3711 is a monster. I’d give it some more time before bottling, though. I always found that after the initial rapid ferment it will slowly ferment another 3 points or so over another 7-10 days. I don’t think I’ve ever had 3711 finish higher than 1.004

And while the flavor is a bit different from the peppery spice of other saison strains, it has this dry white wine character that I like a lot. It goes very well with fruit, and a lower gravity table strength saison with 3711 makes a crisp and refreshing summer sipper.

It is a diaststicus strain, it will take the FG way down.

That’s always been my experience as well, and I’ve used it quite a bit.

I’m going to take another reading in a couple days to see if there has been any movement from the 1.006.
Do I need to do anything special when bottling with this strain to avoid bottle bombs?

Nothing special required, just patience.

glad you like it, me I’ve never been able to make a good beer with it, it always paled in comparison to the dupont and blaugies strain

hahaha. I’ve had the Brew Tek saison strain on slants for years that is purported to be the North Coast Saison strain and I love it.

Sounds like it might be fun to use it with Nelson or Southern Cross or something - is NZ Saison a style? Fuller’s did a nice collab one using Motueka.

I use Nelson Sauvin with it all the time and it is just as good as you’d imagine. One of my favorite homebrews I’ve ever made was a 3711 saison with Nelson and Gewurztraminer must.

Now you’re just teasing, I’m a particular fan of anything with the muscat mutation so Gewurz is a particular fave…
