castle chateau cara ruby

Would this be the equivalent to Carared which I have been hearing so much about lately? I am brewing a pale lager this weekend and my LHBS carries Cara ruby but not carared. If this is a decent sub, what would be a recommended amount?

I know Denny uses cara ruby or has used it. from what I can tell, its the castle equivilant of weyermann’s carared-although havent compared the two in beer.

Carared is good stuff. what are you putting it in? I can then recommend %  edit see pale lager.

3% ish would be what I would add. depending what kind of FG you are looking for.

In the ballpark, but lighter and less red.  I’ve been using it as a light crystal replacement lately, based on the fact that one of my favorite beers in the world, Oakshire’s Watershed IPA, uses it.  I guess I wouldn’t call it a carared replacement, but it is a great malt.

Thanks. I think I will give it a shot. I was going to use 2.5% melanoidin and 2.5% carapils but maybe I will omit those and use a small amount of cara ruby by itself (3.8%).

I am brewing a pale adjunct lager. I know I don’t really need specialty malt for this but I figure why not…

cool. FWIW and for future, if color isn’t what you are after so much, and you want light crystal carahell works nicely and has great foam enhancement and body enhancement IME. I use it vs carapils in great many beers at different %.

Thanks. I will keep that in mind for the future. My LHBS does not carry that one either so with more time in advance I could order it. They do have a decent selection but it is kind of random…

Same here. My LHBS dropped Weyermann in favor of Avangard.

wonder if its a margin thing for smaller or not national HBS??

What’s your guys opinion on Schill? That is what my LHBS carries and I have been using for all my continental base malt. I like it but at the same time I don’t really know any better…

only used their kolsch malt and thought it was quality product.

I heard that, at least when LHBS first got Avangard, it was cheaper for them to get, and mine even sold it a little cheaper than the other continental pils malts. Whether that’s the case now, I give.

Cararuby is a 20L belgian crystal malt. Castle used to call it Caramel Vienna. They renamed it.

Yes. I was curious how similar it is to Carared. It seems that it is a good malt but not necessarily that similar.

The LHBS happens to carry Carahell which I didn’t realize. I went with that instead of the cararuby. I normally use caramunich when using crystal malts so it will be good to try these lighter ones.

I love that beer and keep meaning to try the recipe you contributed to the book. Do you think there’s a decent sub for Cara Ruby or should I track down an online supplier? None of the shops around here carry it, although I can get Dingemans Cara 20L.

Question: aren’t both of these (carared & cararuby) made from green 2 row spring barley?
