Dark Mild recipe and Yeast choices

Hello everyone

I’m getting ready to brew a dark mild recipe I formulated

Oh and thanks again for the previous help on the bitter help it’s kick AXX lol

Dark Mild

My wants:  Malty presence, slight chewenyess; body but not too thick, not bitter but not sweet,
And some crackery bready + malty sweetness from the Marris and the GP :wink: and some slight roastiness
As well a nice Mild color!

5.5 Gallon @ Fermenter
ABV: 3.53%
OG: 1.038
FG: 1.011
IBU: 24.14
SRM/color: 18.48

Mash Temp: 154/155F: 60 mins

(3lbs) 42.5% Marris Otter (bready,Crackery)
(3lbs) 42.5% Golden Promise (Almond Honeyish)
(.5lbs) 7.1% UK Med. Crystal 60
(.3125lbs) 4.4% UK Chocolate
(.25lbs)  3.5% CaraAroma 130/160 Crystal (Weyermann; Awesome stuff)

Fugggles  or Willamette for FWH Bittering Or …maybe use Magnum instead?

EKG at 20 for flavor

Yeast Choices:
WLP023 (Have no idea what this taste/affects beer)

WLP002 (i’ve used this before, malty, etc… )

FYI: I have had Old Speckled Hen beer and I did like that. I’ve read on some forums that they have used wlp023 on the clone versions…

I think your recipe looks great.  You probably don’t even need the caraaroma but it will make a nice addition. You may need to mash a bit lower with all of your specialty grains in there to hit a 1.011 FG depending on your yeast strain of choice.

If you do decide to lower the crystal amounts (english and caraaroma) then you may also want to consider dropping your IBU’s to around 20 to balance the beer out.

I’d opt for WLP023 of the two yeasts myself because it’s a more flavorful yeast but 002 attenuates a little less and would leave behind more malt presence which is more in line with your goals.

Thanks for the input… Im on fence regarding 10.6% crystal in a 5.5 gallon batch  I was thinking of reducing the caraoma to around 3 oz  bringing the total % of my crystal mats to around 9% and lower the IBU’S to 20/21 as you suggested

Mash temp lower to 153/154F?

thanks for the yeast suggestions… I’ve never used WLP023, I have had Old speckled hen beer (ON TAP) and Ive seen clone recipes with that yeast strain, beer was flavorful and great!

Just noticed this thread.  Sorry if I’m late.

I would suggest you NOT use Magnum in a mild.  You want to maximize English character in this kind of a beer, and Magnum is extremely clean and neutral.  I’d go with an English bittering hop, like Challenger or Target instead.  (Fuggles or EKG will work too).
