W-34/70 is fine, but I really love S-189 and Diamond. Of all of these, I might like S-189 the best for THIS style.
It comes down to personal preference. I recommend you should do what I do: split a batch between 2 or 3 fermenters, try all of these yeasts, and find out which one YOU prefer.
I recently used NovaLager on a Leichtbier that turned out very nice. I may try it on other lagers because it is so fast and doesn’t produce that sulfur that I don’t like.
I’ll add another vote for S-189. I tried it last year after winning some in a club competition, and was pleasantly surprised. It dropped clear very quickly for me, and worked well in a German pils. According to my notes, the malt shone through very nicely, which is a good match for a Vienna lager.
Diamond and Novalager would also both work well.
Definitely would suggest S-189 and Diamond but, I am a bigger fan of 34/70. As a brewer of 95% lagers I have come to the conclusion that 34/70 works in almost any lager recipe IMHO.
ferments crisp, clean and clears faster than other dry lager yeasts and lets the ingredients shine through. I cant imagine what more I’d want from a lager yeast.
