So I ordered 1 pound of Simcoe Fresh(Wet) Hops from NB, now I need a suggestions for a fresh hop A/IPA recipe to feature them.
I am still brewing extract, but would consider doing a partial mash for this brew. I realize that I only have the equivalent of 3 oz. of hops, so I am hoping to use the simcoe as flavor and/or aroma, with a small addition of something else for bittering.
Would I be better off brewing an A/IPA now and dry hopping with the fresh hops when they arrive? What would be a good target beer for this?
I just heard from a wholesaler that there are virtually no Simcoe available this year. Along with several other varieties that have been abundant in the past. Get 'em when ya can!
Yeah, they’ve been pretty much all preordered. There may be limited availability, but if you see them and you want them, snap them up. The weather has absolutely sucked this year, which is a major reason given for the lack of hops. I’n told that even varieties like Chinook and Centennial will be hard to find.
I think the pre-orders are all done. Brewmasters Warehouse had 1 lb wet Simcoe preorders through 8/10/11, although it looks like you can still order from them.
I can’t think of any Simcoe wet hopped ales, and even so if you could find one right now, I’d recommend against it since wet hopped ales should be drank by no later than November else they lose their ‘magic’.
As for regular hopped beers with Simcoe as a prominent aroma hop, I’m drawing a blank except for Weyerbacher Double SImcoe which I think blows so I’d not recommend that one, even though Simcoe is one of my favorite hops.
As I recommended on NB forum, maybe make the “Dead Ringer” kit but use the simcoe instead of the included dryhop, or the CYBI Green Flash IPA, or I would do this:
1.065 OG
95% US 2 row
5% English Light Crystal
Mash 153
2oz Amarillo at 20 min
1oz Amarillo at 15 min
1oz Amarillo at 10 min
2oz Amarillo at 5 min
with enough Amarillo, Columbus or Chinook at 60 min to get your total IBUs to equal 65 (after accounting for all the amarillo late addition IBUs based on your AA)
ferment with Chico or San Diego Super (001 or 090)
Dry hopping wet hops? ;D Tom should be here in a minute.
Anyway, while I would not want to question your source,
I do think that there is a particular quality to be achieved by using some fresh hops in the boil, or really late in a hop stand.
Personally, I might be inclined to honor that harvest tradition.
pinnah - he probably got that partially from me - my pro buddy was speaking with Ralph Olsen at an event a few months ago and they were discussing fresh/wet/undryed/ blah-blah whatever you want to call them hops. Ralph made the comment “why do you want to boil off any of those wonderful volatiles?” or something close to that - makes sense to me.
so he recommended either using them late in the boil (hop stand is a great idea!) or dryhopping. Having a brew ready to be dryhopped made the most sense to me, especially since I can’t brew during the week and the shipment, which needs to be used pronto, is likely to come in on a Wednesday not a friday - YMMV.
well, a pre-order can of course be held at any time, but given that harvesting occurs very soon (within the next 2-3 weeks) they’ll want to have all orders in place so they can be shipped as soon as they are picked and received.

Help a newbie out, for a 5 gallon batch, how much extract and steeping grains. I am guessing the Northern Brewer Golden LME or Briess Golden Light DME.
