got free packs of WLP095 and WLP051

my HBS frequently gives me free yeast on top of what i order, and i’m happy about that (lol, would much prefer free hops though), but I order ingredients based on expected recipes, so… my question:

Was going to make a dry stout (90% GP, 10% black malt, 40IBU, 5%ABV) with WLP833, but i now have WLP095, WLP051 and even WLP001 unexpectedly.

I’ve wanted to try WLP051 but I’ve heard such crappy things about its performance, ie. stalling, some people loving it, others hating it. it’s actually a lager, so what temp do i use??

thoughts on WLP833, WLP051, WLP095, or 001 for a simple dry stout?

yes, sorry i typed that quick and didn’t phrase it well. i initially wrote wlp075, but meant my total choices are wlp095, wlp051 and wlp001.

I was thinking about it and i will do wlp001 for the stout, wlp095 down the line and may just dump the wlp051 some day

I think it’s outstanding that they give free yeast. Great shop.

I don’t think I ever heard the negatives you mention about 051.

yeah, i do appreciate them giving me this stuff, and if i manage it well it does end up saving me a good chunk of money off future brews. for people who are less about planning brews well in advance it would be even better

yeah, just googling it i heard several people say they had issues with it stalling out, some people simply saying it isnt that tasty in their opinion, etc.

the fact that its pastorianus - should i start it in the 50s and raise it to mid 60s? ive never tried it before.

I certainly wouldn’t do that.  Don’t overthink it.  I’ve heard a lot more than “several” say they love it. I have no personal experience with it.

WLP051 makes a great Pale Ale. I’ve only used it a handful of times, but it never gave me problems. It’s a little less attenuative than WLP001, but otherwise it’s a good, clean ale yeast. Use it however you’d use BRY-97.
