I might go stronger on the Mandarina. 3 parts to 1 or even 4 parts to 1 if you want that Mandarin Orange character. There is an all MB APA on tap in my house, and it is not over powering, it used 7 oz. for 10 gallons, 3 oz were dry hops. It is really tasty, and the orange comes out nicely.
Yeah, aside from APA I thought a Gumball Head type American wheat too, as well as maybe a simple summery cream ale, witbier to accentuate the orange peel , and in a non style specific pale lager. Just looking for reasons to use it !
Good thought. I’m wondering if I should keep the mosaic for the 60 min or perhaps something a little more neutral…leaving the mandarina and mosaic dominating. I’ve not used mosaic so don’t want 1/2 ounce at 60 minutes taking over.
here’s my general concern with mosaic-Im not a big fan of pine beer. what i dont want to do is add too much that the pine dominates. im looking for some of the other attributes like citrus, floral, tropical, stone fruit, spicy(really hoping garlic or onion does not show its face) to compliment the mandarina.
Ken, I honestly think with that high ratio of Mandarina:Mosaic (and the small amount of Mosaic) you won’t have a ‘piney’ beer. Mosaic definitely has some pine character, but it’s also even more fruity. I think you’ll like the beer.
Agreed. I also think that dry hop additions tend to give proportionally more fruit/herbal than pine/resin/dank. Maybe move some boil additions of Mosaic to dry hops?
I don’t really get much (if any) pine from mosaic, certainly not in that simcoe way, just a ton of fruit. If you want a commercial example of mosaic/mandarin (plus hull melon) then grab a can of Easy Jack. IMO you can’t go wrong with this combo late or as dry hops, and if you want to play it safe then just bitter with a touch of magnum.
