Hoppiness The Destroyer IIPA

Hey all Im getting ready to brew up a huge Double IPA and was wondering if you all might give me a little feedback.

1.08oz Chinook 15 min boil
3.47oz Cascade 10 min boil
2.79oz Centennial Steep/Whirlpool 15min
5.10oz Cascade Steep/Whirlpool 15min
3.00oz Cascade Dry Hop for 6 Day (Put into primary when FG is within 3 to 4 points before 1.015)

Use American Ale 1056 (2 smack pack starter)

Mash at 154F until full conversion

It looks fine to me up until the dry hopping.  For a big IPA (or any IPA for that matter)  I use a minimum of 1 oz. per gallon.

I would move the 10 min cascade to dry hop

I’d probably swap out the CaraPils for sugar to help dry it out a bit. Hop quantities are kind of funky - where did you get them from?

Personally, I’d move your 10 & 15 minute additions to the whirlpool, and double your dry hop, but add another hop variety. In a DIPA I use 3-5 hop varieties in the late and dry hop additions to increase the complexity of the hop character a bit.

Speaking of drying it out, isn’t that mash temp a bit high for a DIPA? I think you would want more around 148-150 for some more dryness, but I’ve only made 1 DIPA, and it was from a kit: I just blindly followed the directions

Yeah, it is. I mash IIPA @ 149F/90 mins aside from using a lb of sugar. Way too many sweet IIPAs out there IMO.

Also may want to consider a normal 60 minute bittering charge instead of or in addition to your FWH to get some punch out of it.
