So something like an ESB seems like it might compliment the idea …just that I ordered
a bulk supply of dates to eat out of hand and I will have a plenty…for a while.
It is my new goto sweet tooth replacement for sugar…plus I get soluable fiber at the same time.
I love dates! Especially when they’ve set for a while and the sugars start to crystallize. Mmmmm.

Date sugar was a popular addition for a while, mostly to belgain brews. The sugarcane and date sugar mix jaggery has been a pretty popular beer addition as well. If I remember correctly using dates or date sugar was discusssed in brew like a monk? Sorry I don’t have any personal experience to share but with a crate full of dates I think I’d be trying an experimental batch as well. cheers, j
oh yeah - dates and 70% cocoa dark chocolate is a pretty hard to beat snack
I’ve never done a “dry dating” per se, but I did bake a date paste into a bread loaf once that I used for a beer and I’ve doctored mead in the past with date syrup.
Both worked really well. My concern with doing date puree would be the time needed to get everything broken down and dissolved.
I was thinking of macerating the dates in hot water then pureeing/blending until there’s a syrup.
How about caramelizing them in a pan, de-glazing with some dark rum and simmer for a few minutes before cooling at adding to the fermenter?
At that point it may just be easier or make more financial/time sense to buy date syrup from your local friendly middle eastern market.

I am going more for the hot water slurry mode that just sounds betta.
Now i still have ample dates and am considering geting some ECY (yeah right) bug farm
and making that slurry and doing a ferment with the bugs. FRANKENBIER

Tried ordering the ECY last time - trigger finger just wasnt fast enough. Hopefully next time!
I did a raisin puree with hot wort and added at the end of the boil. Good stuff. Its how DFH adds raisins to Raison D’etre.
