Was planning on brewing a Two Hearted recipe on Friday and I’ll have some slurry from a Kolsch I did that I can pitch on. Any thoughts on how an IPA would turn out with Wyeast 2565?
That yeast is great in hoppy beers imo. I have done a wheat IPA and a current APA with good success.
This has become one of my favorite IPA’s, using Kolsch yeast. I do switch out to Pils malt and a pound of Munich I. FWH, ton of hops at whirlpool, and a ton dry hopping. Very light and is a hit in the summer. Give it a good try.
I think it would go very well, but you may want to bump up your fermentation temps to around 65F or so.
FWIW, I pitch this strain at 58F typically for kolsch’s and ferment around 60F.
What’s the thought about the higher ferm temp? I was thinking doing the Kolsch yeast would make an IPA “too clean.”
IMO opinion you want a clean yeast profile for an IPA to let the hops shine.
To provide a bit more character through fermentation so it doesn’t across as too “pseudo-lager” like. I would think that 63-65F should get you there with this strain.
Kolsch yeast is actually one of the secrets to awesome IPAs. I believe I learned this from a Basic Brewing podcast from several years ago, where they ran a yeast experiment, and Kolsch yeast was the hands down winner.
Many (most) AIPAs are made with 1056/001/S05 which is pretty clean as well. Clean yeast character means the yeast stays out of the way of the malt and hops.
