I’m about to finish up with my mash paddle carved out of a 36" piece of maple. I’ve seen that these are finished by applying a food-grade lemon-based oil but does it really need to be lemon-based or can I just use food-grade block oil?

Is there a concern about the oil dissolving into the wort in the kettle? FWIW, I have 2 paddles and neither are finished with anything.
I am planning on going raw wood when I make mine too. Think of the wooden spoon in mom’s kitchen. It isn’t seasoned per se.
