Opinions on piney/ Earthy IPA recipe

I usually stick with IPA that are Floral or have lot of citrus notes I said I want to try something a little Piney and earthy my recipe is below let me know what you think. Thanks

12lbs marris otter
12 oz Carmel 40L
8 oz carapils

1 oz Chinook 60 min
1 oz Simcoe and willamette for 10 min
.5 oz Columbus for 10 minutes
1 oz Simcoe for 5 minutes
1oz Simcoe Chinook and willamette dry hop for 7 days

I think the Willamette will be lost behind the Simcoe et al.

Personally I don’t get a ton of earthy from Willamette anyway. Edit… I was thinking Pelican Kiwanda was Willamette but its Mt Hood… I’m probably wrong on many levels

I have a similar goal for my red rye APA. I bitter with Columbus then Simcoe, Chinook, & Centennial late in the boil and dry hop. For you goals, I would probably replace the Centennial with Columbus. I get a lot of earthiness from the rye though…

I agree that the Willamette will get lost unless you use a lot more of it.

I agree with the posters who say that the Willamette will get lost. That is a lot of Simcoe and it is pretty strong stuff. I also think that dry hopping for more than 4-5 days doesn’t add anything good.

Perhaps subbing Northern Brewer for the Willamette will help. If you really want that pine flavor, nothing beats a spruce beer.

Earthy=UK Fuggles.

I agree–Fuggles would give you earthiness. I’ve grown to enjoy Fuggles very much, but for some brewers, it is too much…

My spruce ale is not piney–when I use spruce buds, I get a floral/fruity flavor, so I would recommend Chinook instead.

Be careful in not overdoing the Simcoe.  Although it is inherently piney, overdoing can make the beer “catty” (i.e. cat pee) to my nose and palate.  (Note to all, I do not profess that I have ever tasted cat pee, but the aroma is enough to let you know what it might taste like ;D).  My wife is even more sensitive to the “catty” flavor and aroma and won’t drink an IPA with Simcoe in it.
