Pics of recent brews?

What did you do previously and what do you like about the current mix? Sorry for asking niggling questions, but I’m struggling with how to best blend some of these small Cara type additions and the exact things they’re contributing in different proportions.

well going way back- i would have used pils with some carapils.  i then transitioned to pils with carahell. Now blending a little more to add some more malt complexity.

BDSA

Hoosierbrew (Jon) cider. Great apple taste - love the acidity and tart crisp finish Jon. Thanks for sharing this one- bet it’s a crowd favorite.

Thanks Ken. Glad you liked it! It kind of hits the niche between what I like and my wife likes. I like drier, she likes sweeter. I think it has elements of both. It just took a silver at the GLINTCAP comp up in Michigan.

1056 @ 60F - took awhile but I let it go dry like normal for me. Backsweetened and acidified (malic).

cool. so 1056 is like wlp001 right? might have to try that or even wlp090 and see what happens.

Yep, same. Any of those would work well. I like how 1056 stays out of the way of the apple character.

This is Jon’s American strong ale. First- it’s 8%abv. Second- no way in hell you’d ever think this beer was that strong…pun intended. It’s a rarity to find high abv beer like this dry and easy to sip…,well gulp really. Not only is the malt prominent, the hops are fantastic and both meld well together. If I didn’t know the abv I’d be smashed as I could crush these. Well done man- send me the complete details as I really want to give this one a shot.

Nice!

Thanks, man. It’s definitely dangerous! I can attest after last Friday night.  :)  Glad you liked it.

It’s a take on the CYBI Arrogant Bastard recipe that I’ve tweaked a little over time:

OG 1.071
FG 1.010
IBU 96.4 (I know, hard to believe. The high crystal balances.)
SRM 23.7

87.6% U.S. 2 Row
10%  Special B
2.4%  Flaked Barley

55.5 IBU Chinook - 60
27.5 IBU Chinook - 15
13.4 IBU Chinook - 10
1 oz Chinook - 0 min (5 gallons)
1 oz Chinook - dry

WY 1098 - Pitch 62, hold 64F.

Brown Balanced

Mash 150F/90 mins @ 5.45 pH

i figured wlp007/1098…freaking love that yeast. i have a 1.070 IPA scheduled this weekend with 007.

Nice straightforward recipe makes me want to brew it.  Nothing worse than a recipe with 1000 ingredients, I pass on those more oft than not.  I’ll put this on my ever growing list, maybe for this fall/winter.  Thanks for sharing.

Totally agree, JT. It’s simple, easy and just killer.

not sure ive ever had 100% Chinook hopped beer…like it a lot.

Do you do anything else besides schwilling good beer?  Man I am jealous of your intake.  ;D

Don’t try this at home…IMA professional  8)

Awesome.  I am going to try to catch up to you tonight. Start off with BDSA then improvise with my Dortmunder and Irish Red.

Yeah, who am I kidding?  After the BDSA I will be ready for bed…

Yep, great, underrated hop.

Edit -  AB allegedly is all Chinook, too.
