So I have a pack of T58 that i haven’t used and am wondering if my summit saga (hose brew) would be a option for this style yeast. I actually want to do a split batch yeast comparison between t58,us05. Any input or thoughts? I hope to pitch later today.
Thanks,
Go for it. You’ll end up with two very different beers.
T58 is a Belgian style yeast that’s fairly heavy on phenols and has a fair amount of esters. I don’t know what beer you’re talking about, but ask yourself if those sounds like flavors you want in it.
I have used it to brew a decent tripel in the past. At first, the finished product was quite spicy (almost clove and pepper-like) but after allowing the phenolics to meld and age a bit, it gave way to a some desirable belgian esters.
Decent Belgian dry yeast, but not the best yeast IMO.
I would be concerned about an AIPA level bitterness with a Belgian yeast that ferments bone dry. I’m not familiar with the recipe though, so it could be a great match.
Ill keep you all posted I did the split batch
